A delightful white blend from Gaillac’s Cave de Labastide (France’s oldest cooperative), combining ancient varieties Mauzac (70%) and Loin de l’Œil (30%). Part direct-pressed, part skin-contact (~10 days), wild-yeast fermented in concrete and aged on fine lees for 10 months. Expect straw-yellow colour, inviting notes of honeysuckle, lime, lemon, grapefruit peel, rockmelon, and white flowers, with a vibrant mineral energy. Crisp acidity and a refreshing palate make it ideal served chilled.
