Rackham is vinified from the Jurançon Noir grape variety. Native to southwestern France, genetically similar to the Folle Blanche (indeed, sometimes Jurancon Noir is called Folle Noir) and Cot.

To avoid vegetal and green notes, cazottes have reduced over the years, the usual 10 days maceration to only 3 days. In this way they obtain more fruit and lower vegetal extracts. About 1 hectolitre is left with the skins, the rest was pressed. Both components finished their fermentations (alcoholic and malolactic) after assembly in the same tank. 

Dark purple colour, aromas of berries and cherries. Slightly tannic with balanced acidity.
