Harbourne Blue - Delicately Sweet Blue Goats Cheese
Harbourne Blue is one of three cheeses made at Ticklemore Dairy in Devon. The Dairy was set up over thirty years ago to make blue cheeses using similar techniques to Roquefort.
This cheese is light with an elegant sweetness with a slightly crumbly texture. It is quite variable in taste and texture depending on the season it is made in. Young cheeses are light and delicate with a crumbly texture. Older cheeses are often stronger (or very strong).
Ticklemore Dairy have been sourcing milk via the Lewis family as of June 2020 run by Father David and sons John and Andrew. Their milk comes from a varied mix of Toggenburg, Saanen and Alpine goats that have been bred with the original Anglo Nubians’. Luckily, these goats get to have fun with their friends as they are separated into five separate family groups. Whilst in the parlour the goats are fed cake, they are also given as much silage as they can eat whilst the younger goats are treated to homemade, rolled barley. The milk has a wonderful light and oaty taste producing fantastic tasting cheese.
