We've taken the bones of our Export India Porter recipe to form the basis of this Baltic Porter. The most significant difference is that the fermentation is carried out with a lager yeast, rather than the ale yeast we would usually use. And the beer it self has been lagered for 9 weeks. This makes it all about smoothness. The lager yeast gives a cleaner, smoother character, and a creamier texture than an ale yeast would. Less of the fruit flavours that appear in our EIP, more dark chocolate with still some of that milk chocolate velvetiness. We have not dry hopped this beer, to enhance the clean malt character. We have toned down the roastiness a little as well, again to keep things smooth.
