One of Three of the very first wines made from grapes grown at Tillingham. The culmination of four years of toil and discovery, these wines are the start of a new era for Tillingham and an indication of what lies ahead.
A blend of six aromatic white varietals, from the first pick of the harvest. Grapes hand sorted then whole bunches trodden by foot. Soaked for twenty-four hours and pressed straight to five-year-old barrels for fermentation.
Racked into a stainless steel tank after three months by gravity. Occasional batonnage.
