Blend of Bittersweets: Dabinett & Chisel Jersey. Fermented with wine yeast and Belgian saison yeast individually and then blended. Left to condition in a vessel that allowed the introduction of local wild yeasts and bacteria for six months. Finished and matured in a white wine barrel for a further 6 months.
